Among the best sake rice, Yamada-Nishiki, only carefully selected rice grown under contract is used to make this junmai daiginjo, which is carefully prepared and matured at a low temperature for 1,000 days. The Nishikie used on the label is based on Kawatake Mokuami's masterpiece "Megura Nagaya Umegakatobi", first performed by Onoe Kikugoro V in 1887.
